The salmon roe produced by PURE is extracted only from the highest quality Pure Atlantic Salmon ( Salmo Salar )) grown in-house, ensuring the strictest level of control and quality. Caviar has a light and fresh taste of sea salt.
We recommend slow curing in the refrigerator over 24 hours.
Frozen fresh salmon roe. The composition does not contain any additives except 3g of salt.

Leche de Tigre "Tigro Pieno" peruvietiškas padažas pritaikytas Hiramasa ceviche Šis Leche de Tigre receptas pritaikytas Hiramasa (yellowtail kingfish) žuviai: švarus, aromatingas, ryškus, bet subalansuotas. Puikiai tinka ceviche arba kaip užpilas prieš pat patiekimą. Įranga patogiam darbui: didelės galios blenderis, sietelis, citrusinių vaisių spaudyklė. Ingredientai (viską trinti blenderiu) Ingredientai Kiekis (pagal 700g žuvies filė) Pastabos Atvėsintos Hiramasa žuvies sultys 100 ml Jas gauname prapjovus vakuumo pakuotę. Visas skystis sunaudojamas padažo gamybai. Tai pat galima naudoti apipjaustymų mėsą. Šviežiai spaustos žaliųjų citrinų (laimų) sultys 90 ml Laimus perpjauti per pusę ir išpjauti vidurinę baltą dalį, kad nuimti kartumą. Baltasis svogūnas 60 g Stambiai supjaustyta (tradicinis pasirinkimas padažui). Kalendros stiebai 10–12 šakelių stiebai Taip, būtent stiebai naudojami blenderiavimui. Gerai nuplauti, naudokite daugiau stiebų nei lapų. Salieras 25 g Suteikia gaivumo. Raudonasis čili pipiras 10–15 g Be sėklų, jei norite švelnesnio aštrumo. Neutralus aliejus (nebūtina) ½ a. š. Vynuogių kauliukų arba saulėgrąžų. Gaminimo eiga 1) Paruoškite laimų sultis Nulupkite laimus iki minkštimo – pašalinkite visą baltąją dalį. Spauskite švelniai (be stipraus „minkymo“), kad neatsirastų kartumo. Sultis perkoškite ir laikykite šaltai. 2) Paruoškite žuvies sultis Naudokite tik itin šviežią žuvį arba mūsų sashimi kokybės ir Ikejime sertifikuotą Hiramasa filė. Surinkite skystį iš apipjaustymų / kaulų / sprando (galima lengvai nuspausti), arba naudodami mūsų produktą, surinkite vakuume susikaupusias sultis Laikykite šaltai (šaldytuve) iki patiekimo. 3) Trinimas blenderiu Į blenderį dėkite: žuvies sultis, laimų sultis, svogūną, salierą, kalendros stiebus, čili, česnaką, imbierą (jei naudojate), ledą. Blenderiuokite 10–15 sekundžių. Nepertrinkite iki putojančios masės, kad neišryškėtų kartumas. 4) Pagardinimas ir perkošimas Druską dėkite palaipsniui, galite blenderiuoti dar 2–3 sekundes. Perkoškite gautą padažą per smulkų sietelį, lengvai spausdami šauktų per sietelį. Jei pasirinkote pridėti aliejaus, tai yra proga panaudoti įmaišant ½ a. š. neutralaus aliejaus. Kaip naudoti su 700 g hiramasa Žuvį supjaustykite kubeliais arba griežinėliais. Lengvai pasūdykite. Leche de tigre pilkite tik prieš pat patiekimą. Marinavimo laikas: 30–60 sekundžių (hiramasa yra švelni – nereikia ilgiau). Skonio tikrinimas: padažas turi būti šaltas, aromatingas, „pieniškas“ (nuo emulsijos), rūgštus, bet ne aštriai „kandantis“.
